| Making
a great wine, starts with great grapes. Our pursuit has led us to
the Handal Vineyard located in the Alexander Valley in Sonoma County,
California. This region produces some of the world’s best grapes
and they are used by some of the finest winemakers in the country.
The climate is ideal for producing grapes that have the characteristics
for making quality wine, a lasting vintage which you will be able
to enjoy over many years.
Our standard bearer grape in our 2004 and 2005 wine is Cabernet
Sauvignon. These fine grapes have the most desirable characteristics
for our process, a Ph of 3.70 and Brix at 24.5- 25.5. This produces
a wine with 13%-13.5% alcohol content. Our grapes are tested and
checked until they are ready, then are picked at night when it’s
cool, to avoid shock, and rushed to us in refrigerated trucks. We
immediately start the crush and begin the wine making process.
